We got a new gas cooker and my oven is once again functional! Let me tell you, I was extremely excited when it came and couldn’t stop turning it on and off again and marvelling at the working oven!
Do you know how hard it is to cook regularly and various meals when you don’t have a working oven? Can you imagine how starved I was for a simple strudel? Well, starved enough to make it my first oven-dish in over 9 months!
As you’ll see, my spinach and feta strudel is far from elaborate or fancy. It is quite easy to cook and makes for a great quick dinner.
Serves: 4 | Time: 45 Min | Sides: Yoghurt sauce and green salad
- 1 bag of frozen leaf spinach
- 1 pack of feta
- 3 garlic cloves
- 1 pack of puff pastry
- (salt, pepper)
- Heat (and thaw) the spinach in a pan – make sure that it doesn’t burn – and add the cleaned and chopped up garlic
- When the spinach is completely defrosted, let it cool off for a bit and press out the juice
- While you are waiting for the spinach to cool off, cut the feta into stripes or small cubes
- Roll out the puff pastry and put the (pressed out) spinach in the middle
- Put the feta on top of the spinach and fold the pastry to the middle until it overlaps and won’t break apart in the oven
- Bake for 15-20 Minutes until the dough is brown
I put salt and pepper in brackets above, because I feel that you don’t really need to spice feta up any more since it’s already so salty but if you like it a bit spicier, feel free to salt and pepper the spinach to taste!
I also love to eat my strudel with some yoghurt sauce. For this sauce I use one greek yoghurt cup and I spice it with garlic and other herbs until it tastes about right (there is no real recipe). And don’t forget the salad, which makes this rather heavy dish a bit lighter and gives everything a refreshing touch!
